Baby One Mai Tai
Inspired by Brynn Smith’s “Hit Me Baby One Mai Tai” featured in Signature Cocktails, this riff features a pistachio-based orgeat and an easy strawberry-infused tequila. Shake with cracked ice. Pour unstrained into tumbler. Garnish with cherry and dehydrated pineapple wheel.
*To Make Strawberry-Infused Tequila: Combine 680g halved fresh strawberries with 480mL blanco tequila. Let sit for 3 weeks, shaking occasionally. Strain through mesh strainer, gently pressing on berries to release more liquid. Discard berries. Strain mixture through coffee filter suspended in a strainer set over a bowl. Bottle and store away from direct sunlight indefinitely [method from "The Bar Book"].

- 1 oz Aperol
- 3/4 oz Maison Pistachio Orgeat Syrup
- 1 oz fresh lime juice
- dehydrated pineapple wheel, for garnish
