Kia Ora (Clarified Milk Punch)
INGREDIENTS
1.5 oz Espolòn Blanco Tequila.5 oz Pierre Ferrand Dry Curaçao.75 oz Kiwi Cordial*.75 oz Lime Juice4 drops Ms. Better’s Mt. Fuji White Peach Bitters1 oz Plain Kefir**
METHOD
Combine ingredients and clarify with kefir. Strain until clear, chill, and serve over a large cube in a Signature Lowball Tumbler with a kiwi wheel garnish.
KIWI CODIAL
*Macerate sliced kiwi with sugar for 24 to 48 hours, then strain.
CLARIFICATION METHOD
**Combine Tequila, Curaçao, Lime Juice, Kiwi Cordial, and Bitters in a pitcher. In a separate container, add Plain Kefir, then slowly pour the cocktail mixture into the Kefir (not the other way around). Let rest for 30 to 60 minutes until fully curdled. Slowly strain through a damp coffee filter or cheesecloth without disturbing the curds. The first liquid may appear cloudy, simply re-strain until the punch runs crystal clear. Bottle and refrigerate for up to 1 to 2 weeks.
