Bergamot is the citrus that's always been hard to get. It's rare, it's pricey, and bars usually fake it with a liqueur. This is the real flavour in powder form, paired with pear to round it out. Acid Buddy is a powdered cocktail acid: empty the pouch into a litre of water, whisk, and you've got a bright, clear sour that does the job citrus usually does.

Bergamot Pear is fruity, floral and a little sweet. If you like Earl Grey, you'll get it right away. It's beautiful with gin, vodka and anything pear, and it's great in a martini-style sour.

Make your acid: Add the full pouch to 1L (34 oz) of water. Whisk until dissolved. Bottle it and keep it in the fridge.

Make a drink: 2 oz of your favourite spirit, ¾ oz Acid Buddy, ¾ oz simple syrup. Shake hard in a cocktail shaker with ice and strain.
