Au Fil du Vent makes a beautiful Verjus from three different red grape varietals. The Verjus harvest is made in the first weeks of August when the grapes reach a sugar content of 7-9% (brix) and an acidity between 2.5-2.8 pH. By pressing immature grapes, a very sour juice is produced. This can replace citrus juice in a cocktail for a more unique flavour.
